Jake’s take:
I had Syberg’s recently for the first time in a while, meeting up with my father for a quick lunch. And I had forgotten how much I like it, even though every time I see the sign I remember it being a seafood restaurant instead of… primarily pizza and wings, seemingly. But they have a handful of burgers as well, so I raised it to mom as a potential future opportunity for one of our Burger Bounce locations. And the next time one came around, guess what she chose?
For our appetizer, we went back to a classic and ordered a collection of mozzarella sticks. When we used to eat out more, we would try these at various restaurants and fast-food spots and rank them amongst ourselves, so this was a return to form in a way. These weren’t great, sad to say. They were insanely rigid, far beyond firm and into “is this burnt?” territory. The cheese was fine at least, though I prefer it to be a bit stringier when I indulge. The biggest upset was the marinara sauce, which was basically tomato water with some parmesan floating on top. I didn’t end up using it much, it tasted fine but there was hardly any heft to it. At least it made the sticks a bit softer!
The burger I got was just the Syburger. Syberg’s isn’t a “burger” joint by any means, so their selection is smaller than one would hope. But that’s alright, because I actually really liked the meal! I usually order medium, and this is the first place in a while to get that so right that I actually took notice of it. And the simplicity of the sandwich’s white cheese was great too, I can’t even describe it other than being cheesy (which I love), because it had the tendency to be overwhelmed by the flavor of their house Syberg’s sauce. I’m not sure what this was, necessarily, but it seemed to use buffalo sauce as a base for tang without being spicy. It’s hard to explain since I’m not a connoisseur of these things. I loved the burger, is the long and short of it, and hey the fries weren’t half bad either.
My take:
There are two of Syberg’s locations that work perfectly for us now. One is just a few miles from Jacob’s new place, and one just a few miles from my house. Jacob made the drive this time and we met at my Syberg’s. They had just opened when we arrived, so there weren’t many people there yet. For some reason they seated everyone in the back dining room first, which felt. a little odd.
Honestly spending the time with Jacob was the best part of the meal, as usual. Since he moved close to an hour away, I cherish our Burger Bounce days more than ever as I don’t see him as often. Burger Bounce isn’t about just trying burgers any longer, it’ become a way for us to catch up on life, laugh a little, and spend that time together.
For the appetizer we had the mozzarella sticks, an old favorite. There were… okay. Not bad, not great just okay. They definitely won’t be topping any mozzarella rankings, for sure. For my meal, I ordered the Syburger with fries. It’s topped with white cheese, grilled onions, and Syberg’s signature sauce. If you’ve read many of these posts, you already know that grilled onions almost always win me over. The burger itself had great flavor, and I really enjoyed the combination of the cheese, onions, and their house sauce. Speaking of the sauce, I know it’s one of the things Syberg’s is known for. It has a tangy flavor. It was good, but if I’m being honest, it wasn’t the standout for me that it seems to be for so many people.
Overall, Syberg’s served a solid burger. Nothing about it completely wowed me, but there also wasn’t anything that disappointed me. It’s the kind of place I’d happily go back to, especially knowing there’s one close to both Jacob and me.
Sometimes that’s enough. A good burger, decent fries, and a little extra time with your son? I’d call that a pretty successful Burger Bounce.
